What is the best fondant to cover a cake?
When you have little experience, it is normal to ask yourself which fondant is better to cover cakes, which fondant is better to make figures….
A few years ago, when I started making cakes (although I hardly make them anymore) I looked for many opinions and brands on the Internet, I wanted to find the one that gave me the best result. And I didn’t find the solution. Each pastry chef has their own opinion.
Surely you will read this article and you will not agree with me on all points or maybe none. But I hope you’ll at least find my experience helpful in getting an idea of what to look for.
In the end, I decided to try many types of fondant, from different brands, compositions and origins. And in the end I came to the conclusion that the best fondant does not exist. But we can look for a series of qualities that can help us.
Here are 3 qualities that I think are important to make it the best fondant to cover cakes:
1) Manageable: it must be a sugar paste that can be easily worked in the environment and conditions you have. For example, if it is very soft and your hands are very hot, it may not be the best fondant to use. Here are some tips for working fondant with hot hands.
2) Consistent. I have tried some brands, that personally, I think it is impossible to work with them. They are too brittle or soft and the only thing you get is that it breaks as soon as you are going to pick it up from the table. Better use one that is not so fragile.
3) Elasticity: it must be elastic, but without being excessive. There are some brands whose elasticity makes the previous point happen, they break very easily. On the other hand, there are others that allow it to be stretched and stretched without damaging it.
As you can see, there are not many qualities that it should have from my point of view. Although as I always tell you, it is useless to use the best fondant in the world if we do not know how to handle it.
